Café de Olla is a traditional coffee spiced with cinnamon, cloves, and star anise and sweetened with piloncillo (An artisanal brown sugar sweetener that is sold in the shape of a cone)
Ingredients:
1 cups water
½ cup coffee grounds
20 g piloncillo
1 whole cinnamon stick
Anise pods
1 clove

Recipe:
Add water, piloncillo, cinnamon sticks, cloves, and star anise to a medium pot. Place over med-high heat. Bring to a boil, stirring occasionally so that the piloncillo fully dissolves. Remove the pot from the heat and add the coffee. Give it a stir, cover it, and let it steep for 6-8 minutes. Pour the coffee through a fine mesh strainer or cheesecloth into a coffee mug and serve.
Tips:
For extra-strength café de olla, let the coffee steep for 8 minutes.
